Created for the Round French Oven
Directions:
- In a French oven on medium heat, add olive oil. Sear chicken on all sides, until skin is crispy and brown.
- Add the garlic and anchovies, cook for another 2 minutes. Add remaining ingredients and bake for 45 mins. or until chicken is cooked through.
Ingredients:
- 1 Tbsp olive oil
- 4 chicken thighs
- 4 chicken legs
- 5 cloves of garlic
- 5 anchovies
- 1 jar of tomato puree (passata)
- 1 cup of red wine
- ½ bunch of thyme
- 2 bay leaves
- 2 Tbsp lemon zest
- 300g cherry tomatoes
- 1 cup mixed olives
