Prepared in an Iron Handle Skillet
Whether frying eggs, baking desserts or searing chicken breasts, the Iron Handle Skillet makes it easy to prepare a variety of classic foods on the stovetop or in the oven.
1. Pre-heat oven to 175°C (350°F).
2. In a blender combine the eggs, milk, heavy cream, flour, vanilla, and granulated sugar on high speed for 30 seconds.
3. Butter a 23 cm (9″) skillet.
4. Pour 1 cup of the batter into the skillet and bake for 7 minutes.
5. Remove from the oven and carefully arrange the peaches (or berries) on top of this layer.
6. Gently pour the remaining batter gently over the fruit.
7. Put back in the oven and bake approximately 45 minutes more. It should be golden and puffy on top. A testing knife should come out clean.
8. Let cool. Serve warm or at room temperature.
9. Sprinkle with confectioners sugar if desired.

3 large eggs
1 cup milk
1/4 cup heavy cream
1/2 cup flour
1 teaspoon vanilla
1/2 cup granulated sugar
1 tsp butter
2 medium peaches peeled and thinly sliced (alternatively use berries)

Minimum of 1 hour
